Welcome to this edition of Cooking with Vegtabowl Foods. Today is Day 4 of the 28 Day Smoothie Challenge and we are keeping things calm, cool, and collected (in this hectic world) with this Cool Cucumber Smoothie.

Cool Cucumber Smoothie

Ingredients:

  • ¾ cup coconut water
  • ¼ cup aloe vera juice
  • 2 tbs. Fresh lemon juice
  • 2 tbs. Fresh parsley
  • 1 teaspoon fresh ginger
  • 1 clementine or small orange
  • 1 cup frozen diced cucumber
  • ½ frozen banana
  • ½ cup ice

Directions:

In a blender, add the ingredients in the following order:

  1. Coconut water
  2. Aloe vera juice
  3. Fresh lemon juice
  4. Fresh parsley
  5. Ginger
  6. Clementine or small orange
  7. Frozen diced cucumber
  8. Frozen banana
  9. Ice

Blend on starting on low, gradually increasing to your blender’s highest setting. Blend until smooth.
